Flavours of Wales - The Cheese Cookbook by Gilli Davies & Huw Jones

Cheesemaking was lost to Wales during the Second World War, due to greater demand for milk, but in the mid-1980s, saw the revival of cheesemaking on farms around the country.

This cookbook features stunningly presented traditional recipes, celebrating the best of Welsh food using the fantastic range of artisan cheeses that are available - Caerphilly & Leek Pancake Dome, Olympic Welsh Cheddar Cheese Scones and Asparagus & Aberwen Puffs to name a few.  The book also provides a guide to a variety of specialist cheese makers currently operating in Wales.  A metric and imperial measures conversion chart is included at the back of the book.
